Matching wine: Blue Mountain Vineyard – Brut NV  Gold Label, 57% Pinot Noir, 38% Chardonnay, 5% Pinot Gris
A classic Canadian sparkling from one of Canada’s oldest producers and one of the world’s most beautiful vineyards.

Amuse: Fresh hokkaido scallops with house special tartar sauce.
Matching wine:Le Vieux Pin Winery – Petit Blanc 20 , Sauvignon blanc, Pinot Gris, Chardonnay.From the South Okanagan Valley – Canada’s Desert (not dessert!), a Sauvignon Blanc based blend with a delicate touch but full of subtle complexity.

Starter: Pressed shamo chicken with foie gras
Matching Wine: Bachelder Wines – Lowrey Vineyard Pinot Noir 2014
From one of Niagara’s older Pinot Noir Vineyards made by one of Canada’s most celebrated Pinot Noir producers.  This vineyard has been used in joint projects with Burgundy.

Main: Wood grilled US prime beef harami steak jus de boeuf
Matching Wine: LaStella Winery – Fortissimo 2016, 76% Merlot, 9% Cabernet Sauvignon, 8% Sangiovese, 7% Cabernet Franc.
From the South Okanagan where summers are regularly 40C.  A ‘Super Okanagan’ that references Super Tuscan wines with a unique Okanagan character.
