Terrine de Poireau Renfermant un Cœur de Patate Douce Violette
s surmonte d’une Langoustine Poêlée, de Jambon de Parme, et d’un Feuilleté à l’Encre de Seiche

Terrine of Leek and Violet Sweet Potato topped with Scampi, Parma Ham and Squid Ink Pasties,

60% Cabernet Franc, 20% Grolleau and 20% Gamay

Fried fish Covered by 5 Nuts and Spices with Season’s Vegetables and Rougail, Coconuts Curry Sauce

Grapes: Sauvignon Blanc

Main:

Faux-Filet de Bœuf poêlé 
Accompagné de Cèpes Sautés 
et de Légumes de Saison Sauce Périgueux.
Beef sirloin with Cepes Mushroom Sautee and Season’s Vegetable, Perigueux Sauce.
Wine: Bordeaux Margaux Reserve de l’Estey Calvet Collection
Grapes: Cabernet Sauvignon,  Merlot and Petit Verdot.

Dessert:

Mousse au chocolat et pistache servi avec une glace à la fraise.

Our Wine Instructor

Paul , a 42-year-old US wine instructor, will manage that event in English.
With a lifelong passion for wine, he has made a career in wine sales, wine list development at upscale restaurants, and vinicultural education. He has a deep knowledge of wine production, regions, and food compatibility, and he enjoys sharing his enthusiasm with others interested in wine.
